The Instant Pot Crack Chicken Pasta

I’m giving all the credit to on this one. This meal was easy enough to prepare that my 3-year-old daughter probably could have done it all herself. In fact, she mostly did… with my direction, of course.

This easy dinner satisfies. It has chicken (a kid favorite), ranch (a picky-kid favorite), pasta (pleases my carb craving), cheese (my whole family favorite), and bacon (who doesn’t love bacon?). The hardest part about this meal is getting to know your Instant Pot. The ingredients are simple and I picked them all up at my local grocery store for less than $25. It’s not small recipe either: suggested servings if for 6-8 people, so this would be great for a larger family or for even a potluck. The four of us who were home this week ate it and there were plenty of leftovers for lunches the next day.

Here are the additional things to make it even easier (impressive, right?):

  • Buy chicken that has already been cut into bite-sized pieces from your grocer’s butcher section. I hate cutting chicken anyway. LOL
  • Just sauté your chicken enough to get it coated with the ranch packet and let the steam from the Instant Pot finish cooking it. We left it in there too long to sauté and so our chicken pieces were a bit dry.
  • If you’re not used to low-sodium meals, add a bit of salt or use regular chicken broth.

My daughter added all the ingredients herself and even happily stirred in the cheese after the Instant Pot was finished cooking. She dished out helpings for everyone and even ate seconds. Winner, winner, chicken dinner.
